West of the Juliénas cru, in the hamlet of Les Chanoriers.
Origin
Old vines on steep slopes, gobelet-trained.
Winemaking
Hand-harvested, grapes macerated in tank, with no added sulphites.
Maturing
9 months in tank.
Tasting notes
Colour
Deep ruby.
Nose
Power and finesse.
Palate
Opens with floral, then spicy notes (pepper), with a superb tannic structure and a long finish on liquorice.
For this cuvée with no added sulphites, indigenous yeasts carried out their successive transformations to achieve a long, calm and stylish vinification, allowing the wine to fully express its terroir. This authentic cuvée is fragile: please handle it with the greatest care!
Food pairing
Roast game or game in sauce, duck breast, red meat, world cuisine, and slightly mature soft cheeses such as Munster or Saint-Nectaire.
